Why is the mooncake round?

How La Levain reads the tradition

Chef Wythe trained as a food scientist, which shows up less as novelty than as restraint. The Traditional Cantonese range leaves the old form alone and spends its effort on what goes inside: lotus paste cooked the slow way, aged Xinhui chenpi, lemon peel to cut the sweetness.

The Momoyama range takes the same paste somewhere else. Its skin draws colour from natural ingredients rather than a browning oven, and lotus plumule keeps the filling from turning cloying.

Then there are the Teochew mooncakes, which are baked rather than fried. Fold after fold of Elle & Vire butter pastry, kept in a temperature-controlled room so the butter stays firm, then baked until the spiral shatters instead of bending. Few kitchens still bother.
